Gilbach – Gin Ambrato

At the beginning of the 20th century, a barrique gin with a very particular yellow colour was produced, and then it mysteriously disappeared. The chef and owner of the restaurant Ristorante El Molin at Cavalese, Alessandro Gilmozzi, came up with the idea of making it in a Trentino version, reinterpreting it using only red juniper berries. The special thing about this amber gin is not only the use of red, i.e. not fully ripe juniper berries, but also the fact that it matures for almost a year in a vintage oak barrel made of soft acacia wood. The barrique has been used for thirty years by winemakers Pojer & Sandri, who have used it for a decade each for Chardonnay, Brandy and Orange Wine 0 Infinito Perpetuo. Gilbach Gin Amber 40% has soft notes reminiscent of a distillate, like a whiskey for the perfect end to the evening. You are recommended to enjoy it pure.
