Hyle's concept unites two paths, the personal one of Antonio Biafora and the territorial one, represented by the rediscovery of the 'Via della Pece' (pitch route). Bruzia tree resin, also known as "pitch“, is a precious raw material with a thousand uses: medicine, naval engineering, craftsmanship, and conservation. It was extracted by woodcutters from the larch pine trunk by cutting herringbone grooves. Biafora intends to retrace the pitch route, which starts from the hills by the sea and arrives at the top of the mountains, a short route that nonetheless encompasses a fertile territory rich in different and very interesting raw materials. These are the ingredients for a cuisine that, enriched by the chef's experience and professional career, maps the excellence of the territory by identifying farmers, stock growers and small manufacturers and activating a chain of economic and social sustainability.
