They sprout and ripen at high altitudes and are treated with a gentle processing and just a few simple ingredients to maintain and enhance their natural flavour. The mountain air favours curing without chemical additives, and the fresh winds help the precious moulds that contribute to create artisanal cured meats. The territory thus becomes the main ingredient: air, water and earth contribute to the unique aromas and flavours.
