The Caseificio Nicoletta cheese dairy was founded in 1988 by Paolo and his wife Nicoletta. Cheese lovers for a long time, both first dedicated themselves to retailing. In order to offer their customers the very best products, they have started to develop recipes for new cheese creations as a complement to the traditional Aosta Valley cheeses.

Nicoletta's secret is definitely the passion and care in the selection and maturation of the cheeses. The result is a series of dairy products with an authentic, natural taste.

Some examples are the washed rind cheeses Fontina and Toma di Gressoney, the cheeses classified as flowered crust Montagnard and Rascard, mould-ripened goat cheese and  blue cheese.
