The Eggemoa cheese factory, founded in 2001, is located in Valle dei Molini at 1,300 meters above sea level.

Michael Steiner, a young cheesemaker and taster, has been producing innovative soft cheeses from raw milk for three years. He milks hay milk from his twelve cows which graze in the surrounding meadows.
Michael refines his cheese products with local and regional ingredients such as larch needles, spruce bark and fenugreek, which give them a special aroma.

In 2016 one of Eggemoa's cheeses was awarded the best soft cheese in Italy.
